TUESDAY:  Food

With a full house right now, we have all kinds of food desires.  Paleo, gluten-free, low carb and hungry boys.  I find myself cooking a little of everything to try to please at least someone!  My favorite soup lately has been a simple chicken and vegetable soup. 

Chicken Vegetable Soup

1 T. butter
1 stick celery, sliced thin
1 carrot, peeled and sliced thin
2 T. dehydrated onions

Melt the butter over medium heat in a sauce pan and saute the celery, carrots and onions until the onions are transparent.

3 cups chicken broth
1 cup cooked chicken cubes

Add the broth and bring to a boil

1 cup of vegetables of your choice (shredded cabbage, sliced pea pods, frozen mixed vegetable mix)
1 t. pepper

Stir into broth and remove from heat.  Cover and remove from burner for 5 minutes. 
Ladle into cups.
